Gums are used, as ingredients, to make candies and gummy.
Used as food additives Gum Arabic has the following properties :
- An emulsifier: oil-based pastes mix with water-based solutions better, i.e. toffees
confectioneries
- A preservative : it becomes coating agent for candies or dried fruit, Gum Arabic also prevents sugar crystallizing
- A Flavour encapsulation agent: makes chewing gums taste last longer
- Polishing agent: adds extra gloss to sweets
