In soft drinks Gums are mainly used as an emulsifying agent : they increase the opacity of the solution, prevent oxidation and can be mixed with essential oils. They also have an advantage of being highly effective in acids (citrus acid for example). For instance, Gum Arabic is used in fruity soda drinks to give them a more substantial visual effect and to preserve aromas. In fruit juice, Gum Arabic is also used as a fibre and to enable fruit pulp to remain in suspension.
