Gum Arabic Powder 18960 is mechanically powdered gum acacia seyal while the Valspray F 25500™ is spray dried, the micro properties are different: the gum that is spray dried is pasteurized before it is spray dried and has low micro. On the other hand, mechanically powdered gum has undergone no alteration.
The Acacia Seyal species is recognised one of the most cost effective gums for the encapsulation of spray dried flavours. Gum Arabic Powder 18960 preserves dried flavours from oxidation when they are spray dried thanks to its exclusive film forming features: not only does it encapsulate flavours, but it also acts as a natural preservative. In addition, Gum Arabic Powder 18960 has a very low calorie content (<2kcal / 100g) and can be used in sugar-free/low fat preparations.
Gum Arabic Powder 18960 is mostly used as a coating agent for dried fruit such as nuts and raisins or nut specialities such as pralines or roasted pistachios. Gum Arabic Powder 18960 isolates the dried fruit and thus prevents fat from migrating to the surface and incorporating the sweet or chocolate it is covered with. In addition to coating, Gum Arabic Powder 18960 can also act as a sticking agent, enabling the agglomeration of mixtures for sweet and savory snacks or breakfast cereals.
Gum Arabic Powder 18960 is a soluble dietary fibre with at least 85% of soluble fibre according to official AOAC 985-29 method.
Gum Arabic Powder 18960 is a Prebiotic, stimulating the growth of beneficial bacteria in the colon and it may help to regulate different functions like the gut transit. It shows a high digestive tolerance.
Compared to FOS and Inulin, Gum Arabic Powder 18960 has a low viscosity and excellent stability to pH and heat, that iswhy it can be used to increase fibre content in foods with no reduction of product functionality.
