Definition & Origin
Guar Gum (E412) is a commonly used stabilizer and thickener which comes from seeds of 2 plants that grow in India and Pakistan.
Nowadays, it is considered as the most efficient and cost effective thickener on the market. It is a hydrocolloid, and can be dissolved quickly in cold water.
It is classified as a food additive and is listed as GRAS (Generally Recognized as Safe) in the American Codex Alimentarius.

Guar Gum can be used in the following applications:

- Food: Guar Gum is used to retain and immobilize large quantities of water, to increase viscosity, to prevent the forming of crystals in frozen foods and to stabilize processed foods in a wide range of temperatures.
